Amazing Sweet Potatoe Salad

In this recipe I will not put quantity of each ingredient, as you can pretty much do that to your taste. I personally like lots of the addings, so I'll just say

-A few sweet potatoes, boiled, peeled and chopped into chunks
-Lots of hard boiled eggs. I usually use about a dozen
-pound or so of bacon, cooked really well and crumbled into bits
-little bit of chopped onion
-one or two stalks of celery, chopped
-grated cheese (whichever kind you want, I personally just use cheddar)
-mayo (add a bit at a time so it isn't dry, but not too much either. It should be the tangy salad dressing kind, such as Miracle Whip, or add some white vinigar and sugar to make it tangy)

Mix all ingredients together. This is the best potatoe salad ever.

hmm grated cheese is an interesting addition to the mix, I'll have to try that.

Interesting recipe. I've never thought of doing a sweet potato salad before, but I love sweet potatoes and I'm always wondering what to do with them besides just baking them and eating them with butter. Or the store-bought sweet potato fries. Those are soo good!
