Pork Tomato Rice Casserole


2 Servings

2 small, lean pork chops
1 cup Uncle Ben's natural whole grain brown rice
1 tbs I can't believe it's not butter
1 can stewed tomatoes
1/2 cup frozen corn
2 tsp parsley flakes
salt and pepper to taste


Grill pork chops for about 20 minutes (I like those grill marks)

Meanwhile, combine rice and 2 cups water in a saucepan.
Bring rice to a boil. Reduce heat and simmer covered for 20 minutes.

Place the grilled pork chops in 9 x 9 baking pan.

Combine rice, butter, stewed tomatoes, corn, and parsley flakes in a mixing bowl.

Pour rice and tomato mixture over pork chops, fluff mixture with a fork around pork chops and bake in preheated 350 degree oven (uncovered) for 45 minutes. Serve with your favorite side dish or salad. (I had a small salad with mine)
